Chicken Mole

1 tablespoon sesame seeds

2 tablespoons semi-sweet chocolate

2 (14.5 oz.) cans chicken broth

1 (8.25 oz.) jar Rogelio Bueno Mole

1 tablespoon canola oil

2 lbs. chicken breasts and/or leg quarters


Heat oven to 350 degrees. Line a large baking pan with foil.
Season chicken parts with salt and pepper to taste. Arrange chicken on
foil lined pan. Bake chicken for 45 minutes until internal juices run
Meanwhile, heat a large skillet over medium heat for 2 minutes. Add o
il and mole, stirring constantly until smooth. Add chicken broth to mo
le and stir until mole is dissolved. Bring mixture to a boil, reduce h
eat to medium low, cover skillet and cook for 60 minutes, stirring occ
Once mole has cooked for 60 minutes, add chocolate and stir until choc
olate is dissolved.
Place baked chicken on a large platter and top with mole sauce. Sprink
le chicken mole with sesame seeds and serve.
