Bahama Mama's Roasted Pork Loin

Ingredients

2 to 3 pounds boneless center cut pork loin

1 tablespoon ground cumin

1 tablespoon chili powder

1 tablespoon brown sugar

2 teaspoons salt

2 teaspoons ground black pepper

1 teaspoon crushed red pepper flakes

1 teaspoon cinnamon

Directions


Combine rub ingredients in a small bowl.
Sprinkle rub over pork on all sides; press to adhere. Wrap tightly in
plastic wrap; refrigerate roast, fat-side up, 12 to 24 hours to cure.
Heat oven to 350 degrees. Remove and discard wrap. Place pork on a rac
k in a shallow roasting pan, fat-side up.
Roast pork uncovered, 20 to 35 minutes per pound, until center of roas
t reaches an internal temperature of 150 degrees.
Let stand 15 minutes before carving. Pork should have a light pink blu
sh in center.
Indirect Grilling Method: Follow steps #1 and #2 to prepare pork.
Arrange charcoal on one side of grill and heat 20 minutes or heat one
side of gas grill on High 10 minutes with lid closed. Remove and disca
rd wrap from pork.
Place pork on cool side of grill and close lid. Roast pork 50 to 90 mi
nutes, or until the internal temperature in the center of the roast re
aches 150 degrees for Medium doneness.
Let stand 15 minutes before carving. Pork should have a light pink blu
sh in center.
