Tropical Banana & Fruit Cake

Ingredients

1/2 cup packed H-E-B brown sugar

2 bananas, peeled and sliced

1 15.2 ounce can Dole tropical fruit

1 18.25 ounce box Betty Crocker yellow cake mix

1/3 cup oil

3 large eggs

Directions


Heat oven to 350 degrees. Spray a 9x13-inch cake pan with nonstick coo
king spray or grease with softened margarine; set aside. Sprinkle brow
n sugar in prepared cake pan.
Combine banana slices and fruit cocktail with juice in blender or food
processor bowl. Process or blend the fruit for 30 seconds into a chun
ky mixture.
Combine cake mix, oil, eggs and processed fruit in a large mixing bowl
. Mix for 2 minutes on medium speed with an electric mixer. Pour cake
batter into brown sugar coated baking pan and bake for 35 minutes.
Cool cake completely in pan before turning over onto foil lined cookie
sheet pan or cake platter. Ice the cake with Betty Crocker vanilla or
cream cheese icing
