Sugarless No-Bake Pumpkin Pie
1 (9-inch) frozen Hill Country Fare Pie Crust, baked
1 envelope orange sugar-free gelatin
1 (6 oz.) container H-E-B Fat-Free Plain Yogurt
1 teaspoon pumpkin pie spice
1 (15 oz.) can Hill Country Fare Solid Pack Pumpkin
Bake piecrust according to package directions and cool.
Pour 1/2 cup cold water into a small microwave-safe bowl.
Sprinkle orange sugar-free gelatin into water and stir.
Microwave on High power for 1 minute and add yogurt and pumpkin pie sp
ice; stir to combine.
Add solid packed pumpkin to dissolved gelatin mixture and place bowl o
ver another bowl filled with ice cubes.
Stir dissolved pumpkin mixture until it begins to thicken.
Immediately pour pumpkin mixture into crust.
Cover pie with plastic wrap and chill 15 minutes or until firm and rea
dy to cut
