1 cup H-E-B Butter

1 cup H-E-B Powdered Sugar, sifted

1 tsp Hill Country Fare Vanilla

2 cups H-E-B All Purpose Flour

1/2 tsp Salt

1 cup Hill Country Fare Pecans for Cookies


Heat oven to 350ºF.
Combine butter, 1/2 cup of the powdered sugar and vanilla in a large m
ixing bowl and beat with an electric mixer for 3 minutes on high speed
or until mixture is light and fluffy.
Add the flour salt and nuts to the butter mixture slowly on low speed
of electric mixer until all ingredients are blended. Divide the cookie
dough in half. Shape each cookie dough portion into a log 1 1/2 inche
s in diameter. Wrap the logs in plastic wrap and refrigerated for 1 ho
ur or more (can be made a day in advance).
Cut the dough logs into 1/4-inch slices and place 1/2 inch apart on un
greased cookie baking sheets.
Bake cookies on the center oven rack for 15 minutes or until lightly b
rowned on top. Remove the cookies from the baking sheet immediately an
d roll them in the remaining powdered sugar. Place cookies on a rack t
o cool before storing in container
