No-Bake Pumpkin Cheesecake
1 graham cracker pie crust OR refrigerated & baked pie crust
1 1/2 cups Hill Country Fare Whipped Topping
1/2 teaspoon pumpkin pie spice
1/2 cup H-E-B Sugar OR 6 packets Hill Country Fare Substitute Sweetene
1 (8 oz. ) package cream cheese
1 (14.5 oz.) can Hill Country Fare Solid Pack Pumpkin
Combine softened cream cheese, pumpkin, sugar, and pumpkin pie spice i
n a large mixing bow. Mix with an electric mixer on high speed for 3 m
inutes or until mixture is smooth and creamy.
Stir in the thawed whipped topping using a large spoon until the mixtu
re is a pumpkin-gold color. Pour the pumpkin mixture into the prepared
piecrust. Refrigerate for 1 hour or more until the pie is firm. Alway
s refrigerate leftover cheesecake.
