Loquats and Cream Pie

1 (12-ounce) jar Harvest Moon Loquats, drained

1 Hill Country Fare Refrigerated Pie Crust

1 (0.44-ounce) package sugar free or regular apricot or mandarin gelat

1 (8-ounce) container frozen whipped topping (regular or low calorie)


Prepare and bake one Hill Country Fare pie crust according to package
directions; set aside.
Drain the loquats and reserve the syrup.
Slice loquats into bite-size pieces; set aside.
Pour 1/2 cup loquat syrup or water into a large microwave-safe bowl an
d sprinkle with the gelatin; stir to combine.
Microwave gelatin mixture for 45 seconds on high power.
Add 1/2 cup ice cubes to dissolved gelatin and stir until ice dissolve
Combine the whipped topping and dissolved gelatin in a large mixing bo
wl and stir well to combine.
Place bowl over a larger bowl of ice and stir gelatin until it begins
to thicken (about 3 minutes).
Add sliced loquats and stir to combine.
Immediately, pour mixture into baked pie shell and spread evenly. Cove
r with plastic wrap and refrigerate for 15 minutes to set.
