Cranberry Pecan Pancakes Or Waffles
10 Pancakes or Waffles
1 cup fresh cranberries
1/4 cup Hill Country Fare Pecan Pieces
2 1/2 cups Hill Country Fare Pancake and Waffle Mix
1 3/4 cups Fat-Free Mootopia Milk
1 egg or 1/4 cup Hill Country Fare Real Egg Substitute
2 tablespoons Hill Country Fare Canola Oil
3 tablespoons sugar or 6 packets H-E-B BetterSweet
Combine cranberries and pecans in food processor until the mixture bec
omes chunky in texture (about 30 seconds).
Add pancake mix, milk, egg, oil, and sugar or BetterSweet to processed
mixture. Blend for 30 more seconds.
Heat large skillet, pancake griddle, or waffle maker to medium-high he
at. Spray pan with nonstick cooking spray and pour 1/2 cup batter for
each pancake. Cook pancakes for 1 minute on each side. Serve with butt
er and syrup.
