Christmas Fruit Crepes

Ingredients

1 cup Bakers scoop all purpose flour

1/4 teaspoon salt

3 cups H-E-B Eggnog, regular or light

1 can Hill Country Fare Butter Flavor Spray

2 tablespoons H-E-B Butter

2 bags (16 oz each) H-E-B Frozen Berry Medley

1/4 teaspoon Ground Nutmeg

2 tablespoons H-E-B Brown Sugar

2 packages Softened H-E-B Cream Cheese, regular or fat free

Directions


Combine the flour and salt in a mixing bowl. Add the eggnog and mix t
o remove any lumps. You can prepare this batter the day before, cover
and refrigerate.
Heat a skillet over medium low heat for 1 minute. Add the melted butt
er and brown sugar for 1 minute. Add the thawed fruit and nutmeg and
cook for 2 minutes. Keep this mixture warm.
Heat a large skillet over medium heat for 2 minutes. Spray the griddl
e with non-stick cooking spray and pour 1/2 cup of the thin batter in
the skillet. Tilt the pan so that the batter spreads out thinly. Coo
k until bottom is golden, turn and cook other side. Prepare 10 crepes
, stack and keep warm.
Spread 2 Tablespoons cream cheese in each crepe and spoon 1/4 cup warm
fruit down the center. You can fold the crepe over in half or roll l
ike a taco. Serve each crepe with an additional 2 Tablespoons of warm
fruit.
