1 box (18 oz.) Hill Country Fare yellow cake mix
2 large H-E-B eggs
1 can (21 oz.) Lucky leaf cherry pie filling or your favorite flavor
1/4 cup H-E-B butter or margarine
1/2 cup Sifted H-E-B powdered sugar
Heat oven to 350F. Spray a 13 x 9 inch baking pan with non-stick cooki
ng spray and set aside.
Stir together 11/2 cups of yellow cake mix, 2/3 cup WATER and eggs in
a mixing bowl.
Spoon the mixture into the prepared baking pan. Top the batter with th
e cherry filling and set aside.
Combine the butter and remaining cake mix in a bowl and mix with an el
ectric mixer for 1 minute on low speed until the mixture is crumbly. S
prinkle the crumbly topping over the cherry filling. Bake the coffee c
ake on the center oven rack for 40 minutes oruntil golden. Cool.
Glaze: Combine the powdered sugar and 1 Tablespoon WATER in a small bo
wl and drizzle over the cake. Cut the cake into 15 squares
