Apple Walnut Cake with Cream Cheese Frosting
50 to 60 minutes
3 eggs, beaten
2 cups sugar
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
4 cups diced unpeeled apples
1 cup coarsely chopped walnuts
1/2 teaspoon nutmeg
Preheat oven to 325 degrees F.
Oil a 9x13-inch pan.
Beat eggs, sugar, oil and vanilla in large mixing bowl.
Combine flour, baking soda, cinnamon, nutmeg, and salt.
Mix into liquid ingredients.
Fold in apples and nuts.
Spread into prepared pan.
Bake 50 to 60 minutes or until cake tests done.
For frosting: Combine 2 3-ounce packages cream cheese, softened; 1/4 c
up butter or margarine; 1 1/2 cups powdered sugar; and 1/2 teaspoon va
nilla extract in small mixing bowl.
Whip until smooth and spread over cake
