Ravioli Tomatillo Casserole
25 oz. (about 18 pieces) Hill Country Fare Jumbo Cheese Ravioli
1 medium tomato, chopped (1 cup)
1 medium zucchini, chopped
2 green onions, chopped
2 cups tomatillo sauce or salsa verde (canned or fresh)
1 cup shredded Monterrey cheese
Heat oven to 425°F. Spray a 9 x 13-inch baking dish with non-stick
Evenly arrange the cheese ravioli in the prepared baking dish. Top rav
ioli with chopped tomato, zucchini and onion. Pour tomatillo sauce ove
r the ravioli casserole and bake in oven for 30 minutes.
Remove dish from oven and top casserole with cheese. Bake for 10 more
minutes or until sauce is bubbly and cheese is melted.
