Moms Super-Light Pancakes
1 3/4 cups buttermilk
2 tablespoons sugar
1 teaspoon vanilla
3 cups self-rising flour
4 teaspoons (heaping) baking powder
Whip and blend buttermilk, eggs, sugar and vanilla.
Stir in flour and baking powder with whisk.
Cook on medium heat on lightly oiled skillet.
