High Fiber Whole Wheat Pancakes
1 cup H-E-B whole wheat flour
1 cup H-E-B all purpose flour
2 tsp. Hill Country Fare baking powder
1/2 tsp. salt
4 packets H-E-B better sweet sugar replacement
2 Tablespoons Hill Country Fare Canola Oil
1 1/4 cup H-E-B small curd cottage cheese, regular low fat or fat free
Combine all of the ingredients in a large mixing bowl with 1½ cups of
WATER until a smooth batter is formed. If the batter is too thick, ad
d water 1 Tablespoon at a time.
Heat a pancake griddle or large skillet over medium high heat. Spray
the hot pan with non-stick cooking spray. Pour 1/3 cup of batter for
each pancake and cook on each side for 1 minute (small bubbles will fo
rm) on the first side. Turn over and cook for 1 more minute. Serve pa
ncakes with butter, fresh fruit slices and syrup.
