1 Tbsp. canola oil

1 cup H-E-B H-E-B Ready, Fresh Go! Chopped 3-color peppers

4 cups H-E-B Tortilla Chips crushed

6 large eggs beaten

1 cup H-E-B Fresher Lasting Salsa Fresca mild or hot

1 cup H-E-B Shredded Mexican Blend Cheese


Heat a skillet over high heat for 1 minute. Add oil and peppers to ho
t skillet and stir-fry for 2 minutes.
Add chips, beaten eggs and salsa fresca to peppers, reduce heat tomedi
um low and stir-fry for 1-2 minutes or until eggs are cooked. Sprinkle
with shredded cheese and serve
