Smoked Shrimp Appetizer

4 - 6 servings

1 lb. medium or large raw shrimp in the shell

1/4 cup dry sherry

1/4 cup water

3 tbsps. soy sauce

2 tbsps. minced fresh ginger

1 tsp. salt


Combine sherry, water, soy sauce, ginger and salt. Stir until smooth.
Add shrimp and toss. Let stand for 30 minutes.
Build a moderate charcoal fire off center in a covered grill. Add your
favorite hardwood chips. Drain the shrimp and spread them out on alum
inum foil opposite the charcoal fire. Close lid and smoke shrimp for 1
5 minutes or until shrimp is opaque. Serve hot or cold
