Crunchy Salsa Rice Bites

1 bag (16 oz.) H-E-B steamable rice with corn & poblano or spanish

1 cup H-E-B shredded mexican or jalapeno jack cheese

2 H-E-B eggs

1 cup Hill Country Fare all purpose baking mix

2 cups Hill Country Fare Canola Oil

1 jar H-E-B salsa picante any flavor


Prepare the H-E-B Steamable Rice according to package directions and c
Combine the cooled rice, shredded cheese, eggs and baking mix in a lar
ge mixing bowl. Season the mixture with salt and pepper and set aside.
Heat a skillet and oil over medium high heat for 4 minutes to 375F. Fo
rm the rice batter into balls, using about 2 Tablespoons for each ball
. Drop into the hot oil and press gently with the back of a spoon to f
latten slightly. Fry the rice bites for 1 minute on each sideuntil gol
den. Drain the rice bites on paper towels.
Serve the rice bites warm on a platter with a bowl of salsa picante
