Cowboy Fajita Quesadillas

1/2 cup Sliced Green Onions

1 pkg (12 oz.) H-E-B Fully Cooked Chicken OR Beef Fajita Strips

2 cups H-E-B Easy Melt Cheese, cut into 1-inch cubes

1 can (14.5 oz.) Hunt's® Diced Tomatoes & Green Chilies'

1 pkg (10 ct.) H-E-B Flour Tortillas

1 can Pam Original No-Stick Spray


Drain the diced tomatoes and save the liquid. Combine the cheese cubes
and diced tomatoes in a large microwave safe bowl. Cover the bowl wit
h plastic wrap and microwave the cheese mixture on medium power for 5-
6 minutes, stirring once during the cook time. Stir the mixture to com
bine well.
Heat the fajita strips according to the package directions. Add the fa
jita strips, liquid from tomatoes and green onions to the tomato chees
e sauce and stir to coat all ingredients; set mixture aside.
Coat large skillet with non-stick cooking spray and heat over medium-h
igh heat for 2 minutes. Place 1 tortilla in hot skillet, spread 3/4 cu
p of fajita cheese mixture over the tortilla and cook for 1 minute. To
p with another tortilla and turn the quesadilla over and cook for 1 mo
re minute or until cheese melts and tortillas are golden. Repeat with
the remaining tortillas and fajita mixture. Cut the quesadillas into 4
wedges and arrange on a platter. Serve hot
