Chex & Caramel Corn
Children can help out with almost every step of this recipe. Be sure to use hot pads when taking the caramel mixture out of the microwave.
5 to 6 minutes
4 1/2 c. Chex Cereal (Corn, Rice or Combination)
4 c. popped popcorn
1/2 c. H-E-B Cashew Halves or H-E-B Honey Roasted Peanuts
1/4 c. butter or margarine
6 Tbsp. packed brown sugar
2 Tbsp. light corn syrup
1/4 tsp. vanilla
Mix cereal, popcorn and nuts in large microwaveable bowl; set aside.
Microwave butter, brown sugar, corn syrup and vanilla in large microwa
veable bowl uncovered on high about 2 minutes, stirring with spoon aft
er 1 minute, until mixture is boiling. Pour over cereal mixture; stir
with spoon or rubber spatula until evenly coated.
Microwave 5 to 6 minutes, stirring and scraping bowl after every minut
e. Spread on waxed paper to cool, stirring occasionally to break up pi
eces. Store in airtight container.
