Bean & Jalapeno Quesadillas
1 can (15 oz.) Hill Country Fare refried beans with jalapeños
1 cup H-E-B frozen chuck wagon corn thawed
1 can (3 oz.) French fried onions
12 H-E-B whole wheat or 7-grain flour tortillas
12 thin Deli slices H-E-B monterey jack or jalapeño jack cheese
Heat oven to 450F. Line two baking sheets with foil and spray with non
-stick cooking spray.
Combine the refried beans with jalapeños, chuck wagon corn and French
fried onions in a bowl; set mixture aside.
Place 3 tortillas on each sheet pan. Place 1 slice of cheese on each t
ortilla and spread with 1/3-cup bean mixture. Top with another slice o
f cheese and a tortilla. Spray the tortilla top with non-stick cooking
spray and bake in oven for 5 to 6 minutes. Remove from oven, turn que
sadillas over and bake another 5 to 6 minutes or until cheese is melte
d and tortillas are golden brown.
Remove from oven, let cool 5 minutes and place on cutting surface. Cut
into wedges and serve
