Tired of turkey sandwiches? Try these quick and nutritious lunch ideas from our Resident H-E-B Mom, Stacy—and your kid's lunchbox will be ready in less than 5 minutes.

Hummus and Veggie Pita Pocket

Hummus and Veggie Pita Pocket

  • 1 whole-wheat pita pocket
  • 2 Tbsp. H-E-B Hummus
  • 1 slice provolone cheese
  • 1/3 cup sprouts
  • 1/2 sliced tomato
  • Romaine lettuce leaves

Spread hummus on both insides of pita pocket. Layer remaining ingredients inside.
Serve with grapes, H-E-B® 100 Calorie Pack Chocolate Chip Cookies, and lemonade.

Apple Almond Butter Muffin

Apple Almond Butter Muffin

  • 1 whole-wheat English muffin, sliced
  • 2 Tbsp. almond butter or peanut butter
  • 1/2 Grannie Smith apple, sliced
  • 1-2 Tbsp. honey

Spread almond butter on one side of muffin. Top with sliced apple. Drizzle with honey. Top with other muffin slice.
Serve with string cheese, H-E-B® 100-Calorie Pack Butter Cookies, and Hill Country Fare Mango Nectar Juice.

Mini Ham and Cheese Kabobs

Mini Ham and Cheese Kabobs

  • 8 cubes cheese (1-inch cubes)
  • 8 cubes ham (1-inch cubes)
  • 8 grape tomatoes
  • Toothpicks

Lace meat, cheese, and tomatoes onto toothpicks.
Serve with H-E-Buddy® Apples and Caramel Yogurt Dip and H-E-B Light Smoothie.

Asian Beef Lettuce Wraps

Asian Beef Lettuce Wraps

  • 1 large romaine leaf
  • 3 slices deli roast beef
  • 1/4 c. matchstick carrots
  • 1/4 c. red bell pepper, sliced

Lay out lettuce. Lay sliced beef in down the middle. Add veggies. Roll in both sides and secure with a toothpick.
Serve with pack of soy sauce, rice cake, H-E-B Snax Pack, and Hill Country Fare Apple Juice.

Mexican Bean and Cheese Burrito

Mexican Bean and Cheese Burrito

  • 1 whole-wheat flour tortillas
  • 2 Tbsp. refried beans or bean dip
  • 1/4 c. shredded cheddar cheese
  • 1/4 c. shredded lettuce

Optional: chopped onion, tomato, corn, olives
Spread beans on tortilla evenly. Sprinkle with cheese, lettuce, and optional toppings. Roll up, secure with toothpick, and place seam side down in container or baggie.
Serve with H-E-Buddy® Carrots and Ranch Dip, dried fruit, and milk.
