recipe categories / desserts / cookies Texas Chocolate Chip Pecan Cookies Courtesy of My H-E-B Texas Life Magazine Ingredients: 2 1/4 cups H-E-B Baker's Scoop All-Purpose Flour 1/3 cup H-E-B Baker's Scoop Cocoa 1 teaspoon Hill Country Fare Baking Soda 1/2 teaspoon salt 1 cup H-E-B Extra Light Olive Oil 3/4 cup each: H-E-B Granulated Sugar and H-E-B Brown Sugar 1 teaspoon Hill Country Fare Vanilla 3 H-E-B Large Eggs 2 cups (12 oz pkg.) Hill Country Fare Semi-Sweet Chocolate Chips 1 cup Hill Country Fare Pecan Cookie Pieces Directions: 1 Heat oven to 375°F. Line 3 cookie baking sheet pans with parchment paper for easy clean-up and set aside. 2 Stir together flour, cocoa, baking soda and salt and set aside. 3 Combine the olive oil, sugars and vanilla in a mixing bowl. Mix the ingredients with an electric mixer on medium speed for 3 minutes or until light & creamy. Add the eggs one at a time and mix 1 more minute on medium speed. Add the flour mixture 1/2 cup at a time on low speed. Stir in the chocolate chip and pecans with a spoon. 4 Drop the cookie batter 2 Tablespoons at a time on the prepared cookie sheet pans. Bake the cookies on the center oven rack for 14-15 minutes or until set. Cool cookies slightly and remove from the cookie sheets to wire racks. Reduced Calorie Note: You can substitute sugar with Hill Country Fare 0 Calorie Sweetner and reduce the chocolate chips to 1 cup.
