Texas Jalapeno Cilantro Slaw

Ingredients:
8 cups fine shredded green cabbage or a bag (10 oz) angel hair cabbage
3 medium carrots, shredded
1 cup chopped tomato
1/4 cup chopped cilantro
2 jalapeno peppers, seeded and chopped
1/4 cup chopped red onion

Dressing
1 Tablespoon of H-E-B Olive Oil
juice of 1 lime
1 teaspoon Hill Country Fare 0 Calorie Sweetener
2 Tablespoons of H-E-B Texas Twist Serrano Ranch Dressing (found in the Produce Department)

Directions:
1 Combine cabbage, carrots, chopped tomato, cilantro, chopped jalapeno pepper and chopped red onion in a large salad bowl and set aside.

2 Combine olive oil, lime juice, sweetener and Serrano ranch dressing in a small bowl; stir well and keep refrigerated until ready to serve salad.

3 Cover salad with plastic wrap and chill for 15 minutes or until ready to serve. Before serving, add the dressing, season to taste with salt and pepper and toss.
