recipe categories / salads / fruit and vegetable Mediterranean Grilled Peach and Feta Salad Courtesy of My H-E-B Texas Life Magazine Ingredients: Dressing 2 tablespoons H-E-B Extra Virgin Olive Oil 1 teaspoon fresh oregano leaves, chopped Juice and zest of 1 lemon 1 tablespoon H-E-B Mediterranean Honey Salt and pepper Salad 1 cup Central Market™ Organics Lemonade 4 large fresh peaches, each sliced into 8 wedges, with stones removed 2 tablespoons H-E-B Extra Virgin Olive Oil 2 cups Central Market™ Organics Herb Salad Mix 2 H-E-B Fresher Lasting® Jumbo Avocado Halves, thin sliced or chopped 1/2 cup pitted and halved H-E-B Mediterranean Medley Olives (optional) 1 hothouse cucumber, sliced lengthwise, seeded and thin sliced 1 cup H-E-B Crumbled Feta Cheese, regular or reduced fat Directions: 1 Combine olive oil, oregano, lemon juice, zest, and honey in a salad cruet or jar, season to taste with salt and pepper, and set aside. 2 Combine lemonade and peaches in a bowl, toss gently, and drain. This will keep the peaches from turning brown. Combine peaches and olive oil in a baking pan, toss to coat, and set aside. 3 Layer salad mix, avocado, olives, cucumber slices, and feta cheese in a salad bowl or on a platter. Drizzle dressing over salad, cover with plastic wrap, and chill while peaches are grilling. 4 Prepare charcoal or gas grill for cooking (375°F) and spray a grilling mesh with nonstick cooking spray. Place peach slices on the mesh and grill for 3 minutes on each side. Top salad with grilled peach slices and toss lightly. Serve immediately or cover and chill until ready to serve. |
