recipe categories / sides and vegetables / potatoes Grilled Sweet Potato Sticks Courtesy of My H-E-B Texas Life Magazine Ingredients: 1/2 cup Hill Country Fare Natural Walnut Pieces 1/4 cup H-E-B Brown Sugar 2 bags (16 oz. each) H-E-B Ready, Fresh, Go!™ Sweet Potato Sticks 1/4 cup H-E-B Light Olive Oil 1/4 cup Central Market™ All Natural Dessert Spice Rub 1/2 cup H-E-B Lemon or Blossom Honey Directions: 1 Combine walnut pieces and sugar in a heavy-bottom skillet over medium-high heat. Stir mixture while cooking for 3 to 4 minutes, until sugar melts and glazes the walnuts. Immediately spread glazed walnuts on a sheet of foil to cool. Chop walnuts into small chunks or desired texture and set aside. 2 Prepare sweet potato sticks in microwave according to package directions. 3 Carefully remove sweet potato sticks from bags and place on a foil-lined cookie sheet. Add olive oil and toss sweet potato sticks gently. Sprinkle dessert rub on sweet potato sticks and toss gently. Set aside. 4 Prepare charcoal or gas grill for cooking (375°F) and spray a grilling mesh with nonstick cooking spray. Place prepared sweet potato sticks on mesh and grill covered for 5 minutes. Place in serving dish, top with glazed walnuts, and drizzle with honey. |
