recipe categories / seafood / fish Pecan Crusted Catfish with Savory Cheese Grits and Green Beans Courtesy of H-E-B Showtime Ingredients: CATFISH: 4 CATFISH or BASA FILLETS 1 cup LOWFAT BUTTERMILK 3 SLICES WHOLE WHEAT BREAD, processed into medium fine crumb 1 Tbsp. SEASONING BLEND 3/4 cup small PECAN PIECES 2 Tbsp. SHORTENING, as needed CHEESE GRITS: 2 cups WATER 2 cups GRITS 1 1/2 tsp. SEASONING SALT 1/2 cup SHREDDED CHEDDAR CHEESE Directions: 1. Bring water to boil, add grits and reduce to low. 2. Simmer for 2 - 3 minutes. Stir in seasoning and cheese. Remove from heat. FISH 1. Place fish fillets in a large bowl and cover with buttermilk. Set aside. 2. Combine breadcrumbs, seasoning and pecan pieces in a shallow pan. Set aside. 3. Melt 2 tablespoons of shortening in a large skillet over medium high heat. 4. Bread fish in crumb mixture and pan sauté until golden brown on each side. GREEN BEANS Follow microwave instructions on cooking green beans. For additional flavor pan sauté cooked beans in a small amount of olive oil with crumbed bacon and diced onions. |
