Pan-Fried Seafood Serrano

Ingredients:
2 T CANOLA OIL
6 (4 oz each) WHITE FISH FILLETS
2 cups INSTANT LONG GRAIN RICE
1 large ONION, peeled, cut into 1-inch slices and separated
1 TOMATO, cut into wedges
1/3 cup H-E-B TEXAS TWIST SERRANO RANCH DRESSING

Directions:
1. Heat a large skillet over medium heat for 2 minutes. Add oil and fry fillets on each side for 2 minutes. Remove fillets from skillet and set aside. Add rice and onions in same skillet and stir-fry for 2 minutes over high heat until the rice is golden. 2. Add fish fillets, tomato wedges, HEB Texas Twists Serrano Ranch Dressing and 1/2-cup water and bring mixture to a boil over high heat. Reduce heat to medium, cover skillet and cook Seafood Serrano for 10 minutes. Season to taste with salt and pepper. Serve hot.
