Ingredients:
6 H-E-B eggs, beaten
1 1/2 cups H-E-B Skim or Low Fat Milk
1 cup H-E-B Jalapeño Jack Shredded Cheese
1 (12 oz.) pkg. H-E-B English Muffins
12 slices H-E-B Fully Cooked Bacon, chopped
1 cup H-E-B Fresher Lasting Salsa

Directions:
1. Heat oven to 350 degrees. Spray a 2 quart baking dish with non-stick cooking spray; set aside.
2. Combine eggs, milk, and shredded cheese in a medium-sized mixing bowl. Set mixture aside.
3. Cut muffins into cubes. Alternate even layers of muffin cubes and chopped bacon in prepared baking dish. Pour egg mixture over muffin and bacon layers.
4. Bake on the center oven rack for 40 minutes or until a knife inserted in the center comes out clean. Garnish with salsa.
