recipe categories / seafood / fish Basic Fried Catfish Courtesy of H-E-B Culinary Department Ingredients: 1 pound catfish, cut into 1-inch strips canola oil 3/4 cup cornmeal 1 cup flour, separated salt, to taste cayenne pepper, to taste garlic powder, to taste 1/2 cup milk or 2 beaten eggs Directions: 1. Heat enough oil in a deep skillet over Medium-High for fish to float. 2. Rinse fillets and pat dry. Cut into strips. 3. Combine cornmeal with 1/4 cup flour, salt, cayenne and garlic powder in a shallow bowl. Blend until evenly mixed. 4. Place 3/4 cup flour in a second bowl. Pour milk into or beat eggs in a third bowl. 5. Coat fish strips in flour. Dip in milk or beaten egg. Coat evenly with cornmeal mixture. 6. Fry strips, a portion at a time, in 375 degree F oil 4 to 5 minutes until golden. Avoid crowding and try to prevent pieces from touching. Drain on paper towel and serve hot. |
