recipe categories / appetizers / hot-appetizers Chicken Quesadillas Courtesy of H-E-B Cooking Connections Ingredients: 12 oz. frozen H-E-B Fully Cooked Chicken Fajita Breasts 12 flour tortillas (6 inch) 1 cup Monterey Jack or Mexican cheese, shredded 1 bag refigerated H-E-B Fresher Lasting Roasted Salsa non-stick cooking spray Optional Garnishes: H-E-B Sour Cream, guacamole, shredded lettuce and chopped tomatoes Directions: 1. Heat fajitas in microwave according to package directions. Cut into bite-sized pieces. 2. Layer each of 6 tortillas with 1 tablespoon cheese, 2 tablespoons salsa and one-sixth of chicken fajitas. Sprinkle 1 1/2 tablespoons cheese over each; lay remaining tortillas on top. Spray tops of tortillas with non-stick cooking spray. 3. Spray 2 medium skillets with non-stick cooking spray. Heat skillets over Medium-High heat about 2 minutes. 4. Using a spatula, place 1 quesadilla in each skillet. Heat 2 to 3 minutes, until cheese just begins to melt and bottom of tortilla is lightly toasted. Carefully turn quesadillas with spatula. Heat second side 2 to 3 minutes. 5. Repeat Step 4 to cook remaining quesadillas. Cut into wedges and serve with remaining salsa; garnish with sour cream, guacamole, shredded lettuce and chopped tomatoes, as desired. |
