recipe categories / desserts / puddings and custards Pumpkin Flan II Courtesy of H-E-B Ingredients: 1 cup sugar 1 (14 ounce) can Hill Country Fare Sweetened Condensed Milk 2 (12 ounce) cans Hill Country Fare Evaporated Milk 5 whole eggs, beaten 1 (15 ounce) can solid pack pumpkin 2 teaspoons pumpkin pie spice Directions: 1. Heat oven to 325 degrees. 2. Cook sugar in a small skillet over Medium-Hhigh heat, stirring occasionally, until melted and golden in color. Pour caramelized sugar into a 9 x 13-inch-baking dish and tilt dish so that caramelized sugar is evenly spread; set aside. Caramelized sugar will crackle as it cools. 3. Combine Hill Country Fare Condensed Milk, Hill Country Fare Evaporated Milk, eggs, pumpkin, cinnamon and 1/2 cup water in a large bowl: stir well. Pour custard mixture into caramel-coated baking dish and place inside a larger baking dish. Fill outside baking dish halfway with water. 4. Bake flan in water bath on center oven rack for 1 hour and 15 minutes. The flan is ready when a knife inserted in the center comes out clean. Carefully remove baking dish with flan from baking dish with hot water. Cool flan for 20 minutes. Serve warm or chilled. |
