Cut carrot, celery, and onion into large pieces. 2. Place ingredients in a large stockpot. Bring to a boil over High heat, reduce heat to Low and simmer 2 hours while turkey roasts. 3. Strain stock, reserving giblets and neck for use in gravy or dressing recipes. |
