Mama´s Potato Salad

Ingredients:
6 medium white potatoes, boiled, peeled, and cubed
6 hard boiled H-E-B eggs, peeled and diced
1 cup chopped onion
1/2 cup chopped dill pickle
1/2 cup chopped red or green bell pepper or pimentos
1 cup mayonnaise, regular, low fat, or fat-free

Directions:
1. Place 6 medium size potatoes into a large pot. Fill pot with enough water to cover one inch over potatoes. Bring water and potatoes to a boil over high heat and cook for 30 minutes, or until they are fork tender. Drain, rinse, peel and cube potatoes.

2. Combine potatoes, eggs, onion, pickle, bell pepper and mayonnaise in a large bowl. Toss to coat. Season to taste with salt and pepper.

3. Cover with plastic wrap and chill for 30 minutes or more.
