recipe categories / meats / pork / ribs and chops Baby Back Ribs with Spicy Firecracker Rub Courtesy of H-E-B Cooking Connections Ingredients: 2 racks pork loin baby back ribs (4 pounds) 1/4 cup ground cumin 1/4 cup chili powder 2 tablespoons ground coriander 2 tablespoons coarse ground black pepper 2 tablespoons brown sugar 1 tablespoon cayenne pepper 2 teaspoons salt 1/2 cup H-E-B Peach More Fruit 1/2 cup Sadler's Original or Heinz Hearty Original Barbecue Sauce Directions: 1. Heat charcoal 40 minutes until covered with a light layer of gray ash or heat one side of gas grill on High 10 minutes with lid closed. 2. Combine rub ingredients in a small bowl. Sprinkle rub over all sides of ribs; press to adhere. 3. Place charcoal on one side of grill or reduce gas heat toward Low. Place ribs on cool side of grill, bone-side down. Close lid and cook ribs 75 to 90 minutes. Turn after 45 minutes. Add coals to keep chamber air temperature at 300 degrees. Ribs are done when meat pulls away from the bone tips. 3. To prepare Peach BBQ Sauce, combine More Fruit and barbecue sauce in a microwave-safe dish. Microwave 1 to 2 minutes until warm. 4. Cut ribs between bones and serve. For a milder version of the spicy rub, reduce cayenne to 2 teaspoons. Indoor Oven Cooking Method: Heat oven to 300 degrees. Prepare rub and apply to ribs as directed in recipe. Roast ribs on a rack in an open baking pan 90 minutes until meat pulls away from the bone tips. |
