recipe categories / desserts / fruit-desserts Holiday Fruit Ambrosia Courtesy of HEB Ingredients: 1 golden pineapple, peeled, cored, and cut into 1 inch cubes 4 kiwis, peeled and sliced 2 cups fresh strawberries, washed, stems removed and sliced. 2 cups fresh or canned tangerines, mandarins, or navel oranges, peeled and sliced. 1/2 cup sliced almonds 1/4 cup sugar 1/2 cup sweetened condensed milk, optional 1/2 cup shredded coconut, optional Directions: 1. Combine pineapple cubes, kiwi, strawberries and tangerines in a large fruit bowl. Cover with plastic wrap and chill for 30 minutes or more. 2. Heat a large skillet over Medium heat for 3 minutes. Add sugar and almonds to hot skillet and stir constantly until sugar caramelizes and coats almonds (about 3 to 5 minutes). Quickly remove from heat and pour glazed almonds on a sheet of foil to cool. 3. Before serving Holiday Fruit Ambrosia, add glazed almonds and toss to combine. |
