recipe categories / sides and vegetables / potatoes Glazed Sweet Potatoes Ingredients: 3 pounds (about 6 medium) sweet potatoes 6 tbsp. butter, melted 2 tbsp. honey 3 tbsp. molasses 1 tbsp. grated fresh ginger or 1 teaspoon Powdered ginger 1/4 teaspoon cayenne pepper Directions: Heat oven to 375 degrees. Spray a 9 x 13-inch baking dish with non-stick cooking spray; set aside. Arrange potatoes on the middle oven rack. Bake potatoes for 45 minutes or until a paring knife easily pierces potatoes. Cool in cold water and peel. Slice potatoes into 1/4-inch lengthwise slices and arrange in prepared baking dish. Combine butter, honey, molasses, ginger and cayenne pepper in a small bowl. Pour mixture over sliced sweet potatoes. Loosely cover sweet potato with plastic wrap and heat on High power for 6-7 minutes, or until liquid bubbles. |
