recipe categories / sides and vegetables / casserole-sides and veg Savory Yellow Squash Casserole Ingredients: 1 bag (16 oz) frozen HCF sliced yellow squash 1 cup Italian style bread crumbs 1 cup shredded cheddar cheese 1/4 cup chopped onion 2 tbsp. butter or margarine, melted 2 eggs, beaten Directions: Heat oven to 350 degrees. Spray an 8 inch baking pan or 1 1/2 quart casserole dish with non-stick cooking spray and set aside. Cook squash according to package directions; drain well. Mash squash in a medium bowl with a fork or potato masher. Add the remaining ingredients; stir to combine. Evenly spread mixture in prepared baking pan or casserole dish. Bake uncovered for 20-30 minutes or until mixture is hot and bubbly. |
