recipe categories / meats / beef / roasts Easy Beef Burgundy Ingredients: 1 package (1 3/4 to 2 1/2 pound) HEB Fully-Cooked Beef Pot Roast with Gravy 2 cups baby cut carrots 8 oz. sliced mushrooms 1/2 cup Burundy or dry red wine 1/2 teaspoon dried thyme leaves 1/4 teaspoon pepper 1 tbsp. chopped parsley, optional Directions: Remove pot roast from package; transfer gravy to a 5-quart pot or Dutch oven. Set roast aside. Add carrots, mushrooms, wine, thyme and pepper to gravy. Bring to a boil; reduce heat to Medium-Low. Simmer, uncovered, 15 minutes or until carrots are tender, stirring occasionally. Cut roast into 1-inch cubes while carrots simmer. Add beef and cook about 10 minutes until heated through, stirring occasionally. Sprinkle with parsley and serve. |
