Stuffed Mushrooms

Ingredients:
20 large mushrooms, cleaned
1 tablespoon butter
2 tablespoons chopped green pepper
2 tablespoons chopped celery
1 tablespoon green onions, chopped
1 tablespoon green onion
1 clove garlic
2 teaspoon Dijon mustard
1/2 teaspoon oregano
salt and pepper to taste
2 tablespoon Parmesan cheese

Directions:
Preheat oven to 400 degrees. Remove mushroom stems and chop for filling. Place mushroom caps on baking sheet. Chop green pepper, celery, green onion, and garlic. (or garlic already chopped in a jar, 2 teaspoons). Melt butter in skillet. Add mushroom stems and all chopped ingredients. Cook until tender. Remove from heat; add mustard, oregano, salt and pepper. Fill mushroom caps. Sprinkle with Parmesan cheese, Bake 10 minutes.
