Minted Risi e Bisi

Risi Bisi, literally translated literally, means "rice and peas" in Italian. It´s a classic Venetian dish similar to risotto.

Ingredients:
1/2 cup finely chopped yellow onion
1/2 cup finely chopped celery
2 tablespoons olive oil
1 1/2 cups risotto
2 (14.5 ounces cans chicken broth
1 1/2 cups water
1/2 teaspoon ground pepper
1 (10 ounce) box frozen tiny peas (2 cups)
1/3 cup grated Parmesan cheese
2 tablespoons shredded fresh mint

Directions:
Finely chop onion and celery.

Heat olive oil in a 3-quart saucepan over Medium heat. Saute onion and celery 5 minutes. Add rice and saute 3 minutes.

Pour in broth, water and pepper. Bring to a boil and cook 10 minutes, stirring occasionally. Meanwhile, remove mint leaves from stems. Stack leaves and slice thinly to shred.

Stir frozen peas into rice mixture. Cook 10 minutes, stirring frequently, until peas and rice are tender. The consistency should be moist but not soupy.

Remove from heat; stir in Parmesan and mint. Cover and let stand 5 minutes. Serve while hot. Garnish with mint, if desired.
