And now . . . A Word about Scaling

Your H-E-B website offers scaling as a convenient way for you to change—either up or down—the recipe ingredients and quantities. So if you're cooking for a group or just for two, the scaling feature will automatically adjust the recipe amounts for you.

But before you get started, here are some important guidelines about recipe scaling that you need to know.

How It Works
All recipes on the H-E-B website include the number of servings the recipe was designed to produce. To change that amount, enter the number of desired servings you wish to make, then press "Go."

All ingredient quantities will automatically change, but the recipe directions will remain the same. Please take that into consideration when preparing the recipe.

Here are other important considerations you should keep in mind when scaling recipes.

What You Should Know
When scaling a recipe, you will also have to make adjustments for the following:

Scaling Limits. We do not recommend scaling a recipe either up or down beyond four times its original serving size. For example, if a recipe serves 8, the recommended limit for increasing the recipe would be 32 servings; the limit for decreasing the recipe would be two servings. Beyond a factor of 4, results are not guaranteed.

Some recipes do not lend themselves well to scaling. They include dishes that have egg whites, delicate foods such as soufflés, breads with yeast as an ingredient and single large items intended to be divided into smaller portions, such as pies, cakes or a whole turkey.

For recipes that do not scale well, we suggest you prepare the original recipe in multiple batches.

Pan Sizes. Try to keep the cooking pots or baking pans to the same proportions of depth to height called for in the original recipe.

If you cannot keep the pan contents to the original depth, then adjust the time, temperature and amount of liquid accordingly. If the enlarged recipe has a lot of liquid and contents are deeper than the original, increase the time and slightly decrease the liquid. If the dish has a lot of liquid but is filled shallower, then shorten the cooking time and add a little more liquid. If the baking pan is shallower, shorten the baking time and raise the temperature slightly.

Cooking Temperatures. The scaling feature does not adjust cooking or baking temperatures, so begin with the original temperature and adjust from there.

When baking an increased recipe in a double-sized baking pan, decrease the oven temperature 15 to 25 degrees and increase baking time, to allow the center to cook without burning the edges.

If you know the internal temperature of the final product, then use an instant-read thermometer until the dish reaches a safe temperature.

Cooking Times. The scaling feature does not adjust cooking or baking times, so begin with the original time and adjust from there. When cooking more than one dish in the oven at the same time, increase the cooking time and raise the oven temperature by about 25 degrees. If baking half a recipe of cake, bread or pie, the cooking time will be more than half—about two-thirds to three-quarters of the original.

Seasonings. It is best to use less seasoning than the scaled recipe calls for, so always use less than the adjusted amount. When doubling a recipe, use 1 1/2 times the original amount; when decreasing a recipe, use 1/2 to 1/3 the original amount.

Taste your recipe as you go, then add more spices or seasonings according to your taste preference.
