Passover Passover is the eight day Jewish festival celebrating the exodus of the Hebrews from ancient Egypt during the reign of Pharaoh Ramses II. At the center of the celebration is the Sedera traditional meal that takes place on the first two nights of Passover. At the Seder, certain foods have special meanings that represent the Hebrews' struggle against and eventual freedom from slavery. For example, horseradish signifies the bitterness of the slavery experience, while matzo, an unleavened bread, represents the haste with which the Hebrews had to leave Egypt (not even enough time to prepare raised bread). The story of the exodus itself is remembered during Passover through readings from the Book of Exodus, stories, songs and prayers.
