Checking a Whole Turkey for Doneness
Take the guesswork out of making sure your turkey is done just right by following these steps:

meat thermometerspacer1. The most accurate test for doneness is an Instant-Read Meat Thermometer. Insert the thermometer into the thickest part of the thigh, not touching the bone. The temperature should read 175 degrees F. (The pop-up timer on our H-E-B turkeys is a convenient indicator. Just wait until the center pops up, indicating that the turkey is done.)

Note: The center internal temperature of stuffing in the bird (if any) should read 165 degrees F.

2. Pierce the thigh. The juices should run clear, not pink.

3. If the turkey is done, remove it from the oven and place on a clean cutting board or serving platter (save pan drippings for gravy). Cover turkey loosely with foil and a large towel. Allow it to sit for 20 minutes—this is called "resting." Resting the turkey makes it easier to carve.
